The reason why pistons—won't be added to PoC—is a pretty simple case.
Lag Machines
If you've ever played Minecraft, then you'll probably know what I'm talking about. There is something known on the MC community which is common in free-for-all servers or anarchy servers; that is the Lag Machine.
Lag Machines mostly use/require pistons. However, there are some less common ones which don't require them.
Sadly I doubt that pistons or sticky pistons will be added to PoC. Another reason is that the majority of players utilize mobile on PoC. If a large amount of redstone movement or items are loaded and consistently moving in a specific area with a lot of mobile players, my theory is that these mobile players will just tap out with the large amount of lag.
PC players are stronger against large amounts of lag. But even then, lag machines are still powerful enough to crash even PC players. I haven't seen a lag machine myself on PoC, but I'm positive it's possible to be made.
This is my opinion if pistons and sticky pistons are to be added in the future. I doubt they will.

I hope we do, I can make some cool stuff like hidden doors.

I'd love a noise machine...
If the reason not to add pistons was because of lag machines, PoC's already in the process of adding observers and redstone lamps; two other common components to modern lag machines.

Since making two observers face themselves creates an infinite signal feedback loop, allowing for a "redstone clock" to form which lags a server due to constant redstone updates.

Combine redstone lamps to this "redstone clock", and you can also easily lag a server due to constant lighting updates.

Due to the observer and redstone lamp actually being added, pistons are no more of a potential lag issue than these two blocks, so I don't see why they couldn't eventually add pistons one day.

What tablet do you have Danny,, I also use a tablet but no issues recently apart from twice I had to reload due to the in game map not loading, but its just close the game then reopen.
Have you shut down background apps that run.
