How do you get specific blocks like beacons or Emerald blocks in Survival Multiplayer? Also other blocks like the one seen below.
Someone told me it's some sort of deleted variant of wood or something, I don't know.

Yeah "Missing Blocks" are just from an item that was removed from the game and are quite rare. That is from an old variant of wood before replaced by Spruce, not many left. I unfortunately used mine in a build and came back to find my missing blocks turned to Spruce and I lost them
