Guys I found a Stronghold in the jungle biome with this type of spawn: (Image 1)
And -20:-20 of that biome's central spawn coordinate, you'll find this Stronghold's End Portal Room (Image 2)
NOTE: yes I'm aware that the pictures are tooken in Creative Mode, but I'm using private maps, when you create a private map, you have the option to choose 1 of 20 world types, each world type generates one of all the biomes available in PoC(a single world will spawn everything that can be found in the biome you chose to generate, but none of the other biomes will generate, making it possible to study the terrain, an exploration breakthrough!),since PoC's Public Survival Multiplayer terrain is not randomly generated(it's just copied and placed in a certain or random pattern, but each biome type is pre-generated from an original copy of that biome type, and in PoC's Private Maps, you have that ability to see that an individual copy of those biomes), that whatever in the biome you chose generates, you can find that(relative of the spawnzone, not actually coordinates itself) in the Public Server as well, so if you go -20:-20 chunks of any copy of the Jungle's Spawnzone (not -20:-20 of the Public Server's World), then you should find this Stronghold! Since I don't think biomes in PoC are placed rotated along with being copy-pasted and placed in either a certain or random order. You may have to do the math to find what -20:-20 of the biomes are relative to it's spawnzone area. But also you have the ability to set your private map to survival or creative with no effects to terrain, so if you make your private map to creative, you get a bird's eye view of any biome you generate. So if you create a Private Map that generates Biome 2, go to -20:-20, and mine down till you find it, you can find this Stronghold too! :D
Around this section of the Stronghold, an abandoned Mineshaft crosses though in a glitchy manner.
Sadly it seems like the End Portal Frames are absent, but Solverlabs can always add it there(I assume)but of course not in any biomes the people already generated, but any new biomes that players haven't got into to generate the world chunks or went in veiw distance of.
I found this while trying to find every structure in Public Server Biome 2(the Jungle with the netherack temple, spruce leave bushes, and the spawn zone in image 1)
Due to Natural Underground structures not containing certain blocks that they're supposed to (for example, planks,chests,mob spawners,and tracks in Abandoned Mineshafts, mob spawners and chests in Dungeons, or chests,wooden doors, iron doors,mob spawners, or End Portal Frames in Strongholds), no loot can really be found here unless you like stone/cracked stone/mossy stone bricks, stone brick stairs/slabs, stone slabs, cobblestone stairs, or iron bars, basically the blocks of the structure itself.
Also so far I haven't checked if this Stronghold contains a Stronghold Library, but so far I discovered that it contains an End Portal Room, at least two fountains ( one normal, one drained and glitched), at least two Stronghold alter Chest areas(but with chests absent in both areas), at least one "Stairs with tunnel between them room", and at least 2-3 cell rooms(but caves collide with most if not all of them), also there's numerous hallways and stairs, and spiral staircases in the Stronghold. Also some of the points where doors would be in the Stronghold are replaced with stone, dirt, or gravel instead (Image 3).
A long time ago back in the Defender's Clan Era of PoC, either PoC Admin or Olga vaguely referenced the existence of Strongholds in PoC only once (in the comments of an old post I don't remember where it is one the site), with them calling it "the underground castle", and since then, no one acknowledged the Forums about Strongholds outside of Suggestions about the End Diemension, but I finally found it!

Where’s the portal?
PoC has glitched Strongholds, so the End portal frame blocks, are absent, but the rest of the structure's there.
screenshot #2 has the End Portal Room in it, but it doesn't generate the actual portal frame blocks as of yet unfortunately.
