I have mad a huge sub basement under my hideout but when i am just routinely doing work down there, a hoard of zombies and spiders appear , after killing them, i check around but cannot find any openings which lead me to believe they spawn underground if the space is large enough?
Yes,they can spawn anywhere,and even durring day,or even under torch&jack-o-lantern light!
Zombies don't spawn at day time, they can hide in the shades after nights. On the sun Zombies are burning!

I suggest you to think better about traps for zombies, like adding flowing lava around your place...

Yes, you are right, zombies will not spawn in caves where enough lights, but they can came from dark places that located near these light caves. That's why - traps are the best choice.
How do you even get lava?
It naturally generates,and you obtain it with an empty bucket to get lava buckets,which place lava. Same concept with water.
I have a bucket and found lava but cannot get lava in the bucket?
the lava needs to be a source block, meaning that it is not flowing.
Mobs can see you through multible blocks even if the can't get to you thell still hug the walls
Also Zombies can break wooden doors.
