Maybe it despawned because you didn't put a nametag on it?
Mobs despawn to prevent server lags and crashes except special ones like ones with name tag or tamed mobs like horses.
How do I put a nametag on it, did not work
If the sheep wasn't tamed, it may dissapper. I recommend to tame mobs which you want to use in farming.
